Even if summer season has ended, that doesn't mean the taste of summer cakes get less delicious! They will still be enjoyable no matter what. Check out the recipe I shared below here! Enjoy baking and eating it! (˶ˆᗜˆ˵)

Ingredients :

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk

For the Strawberry Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (adjust based on the sweetness of strawberries)
  • 1 tablespoon lemon juice

For Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions :

Step 1 : Prepare the Strawberries

  1. In a bowl, mix the sliced strawberries with sugar and lemon juice. Let them sit for about 30 minutes to release their juices.

Step 2 : Make the Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Slowly add the dry ingredients to the wet mixture, alternating with milk, starting and ending with the flour mixture. Mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 3 : Whip the Cream

  1. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Step 4 : Assemble the Cake

  1. Once the cake is completely cool, place it on a serving plate. Top with the strawberries, including some of their juices.
  2. Spread the whipped cream on top of the strawberries.

Step 5 : Serve and Enjoy! 

Slice and serve the cake chilled or at room temperature. It’s a delightful treat for summer gatherings!
